On Thursday, October 5, 2023, at the Aula Magna of the Rector’s Complex in Santa Maria in Gradi, Viterbo, the conference “The Italian Mediterranean Diet in Ecological Transition: Between Tradition and Innovation” was held, organized by the University of Tuscia in collaboration with the PHIMEK association. The event, both academic and educational, aimed to highlight the role of the Italian Mediterranean diet in the context of ecological transition, the National Recovery and Resilience Plan (PNRR), and climate change, showcasing development opportunities for the agro-industrial sector.
During the conference, the latest research and third mission activities from the University were presented, with a focus on innovative proposals for creating new high-nutritional-value food products derived from food industry waste. The initiative provided an opportunity to connect institutions, companies, and organizations at both regional and national levels.
