Valorizzazione della qualità e delle proprietà nutraceutico funzionali dell’olio extravergine di oliva di Sonnino

ABSTRACT 

The project aims to valorize extra virgin olive oils (EVO) of the Itrana cultivar, typical of the Sonnino (LT) area, and olive production waste (olive leaves and de-oiled olive pomace) by highlighting their functional properties in order to obtain sustainable and innovative ingredients for potential applications in the food, nutraceutical and cosmetic fields, with positive spin-offs also in terms of environmental impact in accordance with the concept of circular viticulture.

Specifically, the project is divided into the following activities: 

(a) Selection of EVO oils of the Itrana cultivar from the Sonnino area, characterized by a high content in minor polar compounds with antioxidant character, such that they can reach the required levels of the EFSA health claim (EU 432/2012), related to the protection from oxidation of blood lipids.

(b) Selection of production waste from the olive-oil sector (olive leaves and de-oiled olive pomace).

(c) Chemical characterization of minor polar components found in EVOs and wastes by HPLC-DAD-MS and hyperspectral digital spectrophotometry and determination of antioxidant activity.

(d) Evaluation of the functional properties of selected EVO oils and prototyped foods by means of in vitro and in vivo experiments in patients suffering from chronic noncommunicable degenerative diseases.

(e) Design of a cosmetic mini-line obtained by using the selected plant matrices.
