ABSTRACT

The objective of the project is to create two wheat supply chains in which to develop products with superior nutritional and health characteristics, including wheat-based foods with low acrylamide content, high soluble fiber content, and a low glycemic index. The collaboration will allow the transfer of the know-how acquired by the University of Tuscia in the use of wheat obtained through genetic improvement programs to the companies involved.
