ABSTRACT
The aim of the project is the valorization of the supply chain of local conservation cereal varieties by means of the definition of the technological and nutritional profile and the genetic certification of Sicilian wheats.
Five Sicilian conservation varieties of tetraploid wheat are taken into consideration: Timilia Reste Bianche, Timilia Reste Nere, Russello, Bidì, Perciasacchi. In order to carry out the nutritional characterization, these varieties are grown in three different locations in Sicily (Palazzolo, Selinunte, Caltavuturo) for three consecutive years (2020-2021, 2021-2022, 2022-2023) together with three modern varieties, Simeto, Iride and Orizzonte. These materials are analyzed to measure the content of α-amylase/trypsin inhibitors (ATIs), fructan content, soluble and insoluble arabinoxylans content, percentage of non-extractable protein polymers in SDS (%UPP), gliadins to glutenin ratio, and total starch. In addition, 57 accessions of the five varieties have been recovered from different custodian farmers and these are genotypized using the Illumina Infinium 7K array, to allow the design of markers for traceability and genetic certification.
