The research group of the Food and Wine Biotechnology Laboratory is coordinated by Prof. Marco Esti; all the research activities are aimed at developing new biotechnologies for food process applications.

The leading research topics are:

1. Sustainable biotechnology for the recovery of high-added value compounds from vegetable sources (e.g. natural colorants, food enzymes and bioactive molecules);
2. Development of immobilized enzyme bioreactors for in-continuous application to food processes (e.g. treatments to improve the organoleptic properties of beverages; continuous milk coagulation);
3. Process innovation applied to winemaking and sparkling wine production (e.g. encapsulated yeasts).

The laboratory staff deals with applied research activity, also through contracts and agreements with various companies in the agri-food sector, including:

1. Amarelli srl-Liquorice Factory;
2. Cuki cofresco srl-Packaging and containers for food;
3. Ghidi Metalli srl – Stainless Steel Tanks and Winemakers
4. Lallemand Spa – Starter cultures for oenological and food applications
5. Pallini Spa – Spirits and syrups;
6. Unicoop;
7. Findus.
