ABSTRACT
Recent studies have shown that some spices and aromatic/medicinal plants are active in reducing high blood sugar levels and in particular β-caryophyllene seems to be among the most promising compounds contained in these plants. In this perspective, the volatile terpene constituents of five spices known to contain β-caryophyllene will be studied: Origanum vulgare (oregano), Piper nigrum (black pepper), Rosmarinus officinalis (rosemary), Cinnamomum verum (cinnamon) and Curcuma longa (turmeric). The analytical part will consist in the extraction, characterization and subsequent fractionation of the spice extracts. These will be subjected to biological assays with the aim of investigating the antidiabetic activities through acellular and cellular assays to test their efficacy and possibly define their molecular functioning mechanisms.
