In recent years, the attention paid to the use of natural organic substances as innovative supplements for functional foods has increased considerably, thanks to the greater commercial availability of substances deriving from the extraction of natural matrices mainly of vegetable origin. These substances are often endowed with important biological activities, such as, for example, antioxidant and anti-inflammatory activity, which allow the functional food to acquire specific preventive and sometimes even therapeutic properties. Furthermore, various natural organic substances can activate specific metabolic pathways connected to the energetic of the cell, favoring a better physiological response effort and stress. Based on these data, the search for new natural organic substances and their derivatives that can act as food supplements is of particular interest especially considering that many of these compounds are often obtained from the valorization of agri-food wastes, thus inserting the research into the green transition chain.
