In order to carry out the nutritional characterization, these varieties are grown in three different locations in Sicily (Palazzolo, Selinunte, Caltavuturo) for three consecutive years (2020-2021, 2021-2022, 2022-2023) together with three modern varieties, Simeto, Iride and Orizzonte. These materials are analyzed to measure the content of \u03b1-amylase\/trypsin inhibitors (ATIs), fructan content, soluble and insoluble arabinoxylans content, percentage of non-extractable protein polymers in SDS (%UPP), gliadins to glutenin ratio, and total starch.
